Growing up, my Nan was the queen of the kitchen. Her hands worked culinary wonders, transforming humble ingredients into culinary delights that left everyone in awe. One rainy afternoon, as droplets danced on the windowpane, Nan declared it was the perfect time to bake something special. Together, we embarked on our mission: crafting homemade digestive biscuits.

With flour-dusted aprons and a twinkle in our eyes, we gathered the simplest of ingredients—flour, butter, sugar, and a touch of bicarbonate of soda. As we mixed, kneaded, and rolled, Nan regaled me with stories of her own baking adventures, each tale imbued with the warmth and wisdom that only grandmothers possess.

The scent of buttery goodness filled the air as we rolled out the dough and carefully cut each biscuit into familiar rounds. Nan’s hands moved with precision, each biscuit a testament to her experience and love for the craft. Recipe: Homemade Digestive Biscuits

Yield: Approximately 24 biscuits Prep Time: 15 minutes Baking Time: 15-20 minutes

Ingredients:

  • 1 cup (120g) wholemeal flour
  • 1 cup (120g) plain flour
  • 1/2 cup (100g) granulated sugar
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1/4 cup (60ml) milk

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking tray with baking parchment.
  2. In a mixing bowl, whisk together the wholemeal flour, plain flour, granulated sugar, bicarbonate of soda, and salt.
  3. Add the cold, cubed butter to the dry ingredients. Using your fingertips or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs.
  4. Gradually add the milk while gently kneading the mixture until it comes together to form a dough.
  5. Roll out the dough on a floured surface to about 6 millimeter (1/4-inch) thickness. Using a round cookie cutter, cut out biscuits and place them on the prepared baking tray.
  6. Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown around the edges.
  7. Remove from the oven and allow the biscuits to cool on a wire rack before enjoying.

By far, digestive biscuits make it into my top three English treats/snacks/desserts of all time. There’s something amazing about a simple digestive. They are so delicious, perfect for a snack, and work so well as a base for so many things (including banoffee pie). I hold a personal weakness for the McVities brand. Your basic digestive is a treat unto itself, but then you add the chocolate coating and you’ll find heaven fast approaching. Digestive biscuits are amazing.
