Tomato, Parmesan, and Prosciutto Fried Panini

Gosh, I’ve had a crazy week! My sister has been preparing for a study abroad and I helped her pick out the destinations for her trip (she’s an assistant), I have a few deadlines coming up at work so I put in a whole 52 hours this week, I made a goal to finish a book on economics in the next month so I read a couple hundred pages, etc. I’m still in the Italian food mindset and so I whipped together my version of a panini I once saw in a bar in Reggio di Calabria (a city in Calabria).
I hope you like it! It’s a lightly fried panini that’s been breaded and filled with some of my favorite Italian food!!!

Tomato, Parmesan, and Prosciutto Fried Panini

 Overall, this panini reminds me a lot of making french toast and wiener schnitzel. Can you even imagine some combination of that? Haha, if somebody came to me and told me that they have a sandwich resembling french toast and schnitzel I would probably never even try it! But believe me, this tastes better than it sounds!
To make this, you’ll need a few ingredients:
  • 16 slices of white bread
  • 3 large tomatoes, thinly sliced
  • 90 grams (3.2 ounces) of parmesan, thinly flakes/slices
  • 90 grams (3.2 ounces, or 8 slices) of thinly sliced prosciutto
  • Basil leaves
  • 60 grams (4 tablespoons) of butter
  • 4 large eggs
  • 150 grams (1 and ⅔ cup) of breadcrumbs
Here’s where you get to see how this compares to making french toast!
If you’d like them round, use a round cookie cutter and slice each piece of bread. Use two slices and place a slice of prosciutto, tomato, and some parmesan on one slice and top with the remaining piece.
Place the butter in a pan and heat it up. We’ll be cooking our panini here shortly!
Beat the eggs, lightly dip the panini in the eggs, then cover with breadcrumbs and cook both sides until brown! And there you have it! Your very own tomato, parmesan, and prosciutto fried panini!  Can you see how they resemble both french toast and schnitzel?

Whether you've had a panini in New York City or a regular panino (translates to sandwich) in Italy, you know the wonders of Italian sandwiches. Come and try your hand at your very own tomato, parmesan, and prosciutto fried panini. It's simple and sweet!

Ingredients

  • 16 slices white bread
  • 3 large tomatoes, thinly sliced
  • 90 grams (3.2 ounces) parmesan, thinly flakes/slices
  • 90 grams (3.2 ounces, or 8 slices) prosciutto, thinly sliced
  • basil leaves
  • 60 grams (4 tablespoons) butter
  • 4 large eggs
  • 150 grams (1 and ⅔ cup) breadcrumbs

Method

  • 1)

    Make the sandwich: Using a circular cookie cutter, cut the bread. Between two bread circles, place one slice of prosciutto, some parmesan cheese, a basil leaf, and a thin slice of tomato.

  • 2)

    Bread and Fry the sandwich: Place the butter in a skillet and heat until the butter melts. Beat the eggs in a wide flat container. Quickly coat both sides of the sandwich in the eggs, coat with breadcrumbs, and place on a hot skillet. Cook both sides until brown. Transfer to a cooling rack, or paper towels.
